A classic Turkish dessert, these pastries are made from cooked dough with semolina and flour, piped into hot oil, and fried until crisp outside and light inside. They are dipped in cold syrup before serving.
Bring the sugar and water to a boil. Add the lemon juice and boil for 5 minutes, then let the syrup cool.
Bring the water, butter, sugar, and salt to a boil. Add the semolina and flour and cook, stirring, until the dough pulls away from the bottom of the pot.
Add the eggs to the cooled dough one at a time, mixing thoroughly until smooth.
Transfer the dough to a piping bag. Pipe small pieces into the hot oil and fry until golden.
Dip the hot fried pastries in the cold syrup and let them absorb it well.
Important: Stir constantly as you cook the dough with boiling water, or it may stick to the bottom of the pot and form lumps. Allergens: Contains wheat (gluten) and eggs.
