Su muhallebisi gets its name from being made without milk: starch is cooked in water alone until it becomes nearly transparent and softly set. In this version, the plain base is topped with kaymak and rose syrup; all the sweetness comes from the syrup, and no sugar is added to the base. Add the kaymak before the syrup, or the syrup will pool on top.

Make the Syrup

Bring the sugar and 250 ml water to a boil and simmer over low heat for 8 minutes. Remove from the heat, wait 2 minutes, then stir in the rosewater. The syrup should be thinner than classic baklava syrup and run off a spoon like water; thick syrup will sit on the base instead of soaking in. Let it cool.

Dissolve the Starch

Whisk the starch with 400 ml cold water until smooth and free of lumps, then pass it through a strainer. The base of this dessert is transparent, so even the smallest lump will be visible.

Simmer Until Clear

22 min

Bring the remaining 800 ml water to a boil, then slowly pour in the dissolved starch in a thin stream, stirring constantly. Lower the heat and keep stirring with a wooden spoon. The mixture will first turn milky and cloudy, then become clear and thick again. It is ready when glossy and transparent and coats the spoon; if you remove it before it turns clear, it will taste starchy.

Pour into the Pan

Pour the mixture into a damp pan to a depth of 2 cm and smooth the top with a wet spatula. Once rested, cut it into squares with a wet knife and place them in serving bowls. Top each piece first with kaymak, then drizzle with the cooled rose syrup and sprinkle with pistachios.

Reminder

Before cutting the pudding set in the pan, let it rest at room temperature for 1 hour, then refrigerate it for 2 hours; this time is not included in the recipe’s total time. If cut too soon, the pudding will break apart under the knife.

Nişastayı berraklaşana kadar pişirmek gerekiyor. Erken indirdim, muhallebi sütlü beyaz kaldı ve şerbet içine işlemedi. Şerbeti muhallebi tamamen soğuduktan sonra döktüm, ılıkken dökünce muhallebi şerbeti çekip dağılıyor.
