Un kadayifi is a traditional Turkish dessert made by layering finely stretched dough with butter, baking it, and soaking it in syrup. A walnut filling makes this dessert a lighter alternative to baklava.
Bring the sugar and water to a boil and simmer for 10 minutes, until thickened. Add the lemon juice and let cool.
Knead the flour, water, and salt. Roll it out thinly to make fine strands similar to shredded pastry, then tear it into pieces before it dries.
Toss the dough strands with the melted butter.
Spread half the dough in a greased baking pan and sprinkle with the walnuts. Cover with the remaining dough and bake in an oven preheated to 180°C / 355°F for 30–35 minutes, until golden.
Pour the cold syrup over the hot dessert as soon as it comes out of the oven. Let it rest for 20 minutes.
Store covered at room temperature for up to 3 days. Freeze for up to 1 month.
