Sweat the onion and herbs
6 minCook the onion in the butter for 4 minutes, until softened. Add the chopped dill, parsley, and mint and cook gently for another 2 minutes.
A staple of Van breakfast tables, otlu yumurta is made by gently cooking fresh dill, parsley, and mint with onion in a skillet, then cracking eggs over the herbs. Grated kashar cheese is sprinkled on top and melted.
Cook the onion in the butter for 4 minutes, until softened. Add the chopped dill, parsley, and mint and cook gently for another 2 minutes.
Crack the eggs directly into the skillet and season with salt and black pepper.
Sprinkle the grated kashar cheese over the top. Cover and cook over low heat for 8 minutes, until the whites are set and the yolks are still slightly runny.
Important: after adding the eggs, keep the skillet over low heat; otherwise, the bottom may burn while the tops remain raw. Contains egg and dairy (kashar cheese).
