Vegemite scrolls are a savory roll found on breakfast shelves in Australian bakeries. They are made by spreading yeast-extract paste and kashar cheese (a Turkish semi-hard cheese) over dough, rolling it up and baking it. They cook much faster in an air fryer than in a conventional oven.
Mix the flour, baking powder and salt. Rub the cold butter in with your fingertips until the mixture resembles fine crumbs. Add the milk and bring together into a soft dough.
Roll the dough into a rectangle. Spread a thin layer of Vegemite over it, then sprinkle with most of the grated kashar cheese.
Starting from a long side, roll the dough up tightly and cut it into 6 equal pieces. Sprinkle the remaining kashar cheese over the top.
Set the air fryer to 180°C / 355°F. Arrange the slices in the basket with space between them and cook for 15 minutes, until golden. If you do not have an air fryer, bake them in a conventional oven preheated to 180°C / 355°F for a similar length of time.
Do not spread the Vegemite too thickly; a thin layer is enough to add saltiness. Allergens: contains wheat (gluten) and milk.
