This is a bite-sized dish made by binding leftover cooked pasta from a previous meal with eggs, milk, and cheese, then baking it with grated vegetables in a muffin tin. Each piece holds together well enough to eat by hand, with no fork needed, and can also be packed cold for lunch. Here, pasta that has cooled and dried out is an advantage.

Prepare the oven and pan

Heat the oven to 180°C / 355°F. Brush all twelve wells of a muffin tin with olive oil, including the sides, or line them with paper liners. The egg mixture will stick to an ungreased metal well and be difficult to remove.

Prepare the vegetables

Finely grate the carrot and zucchini. Squeeze the grated zucchini in your hands and discard the liquid; it yields nearly 100 ml, and adding that liquid to the mixture can prevent the muffins from setting. There is no need to squeeze the carrot.

Mix everything together

Beat the eggs in a large bowl. Add the milk, salt, and parsley and mix. Fold in the pasta, vegetables, and two-thirds of the kashar cheese with a spatula. Make sure the mixture coats every strand of pasta; any dry strands will harden in the pan.

Fill the wells

Spoon the mixture into the wells, filling each to 3 mm below the rim rather than to the top. Press down with the back of a spoon; loose pasta strands may stand up and burn in the oven. Sprinkle the remaining kashar on top.

Bake

Place the pan on the middle oven rack and bake at 180°C / 355°F for 24–26 minutes. The muffins are done when the tops are golden and no liquid egg comes out when you insert the tip of a knife. Let them cool in the pan for 10 minutes, then run a knife around the edges and remove.

Reminder

Let the muffins cool in the pan for 10 minutes before removing them; if you pull them out while hot, they can split in half. This cooling time is not included in the recipe time. Squeeze the liquid from the grated zucchini by hand; otherwise, the mixture will be watery and the muffins may not set in the pan.

Kalan spagettiyle yaptım, uzun makarnayı biraz kestim ve gözlere daha kolay doldu. Soslu makarna kullanacaksanız sosu yıkayın; domates soslu artıkla denediğimde yumurta karışımı tutmadı ve lokmalar dağıldı.

Kalıbı iyice yağladım, kâğıt kapsül kullanınca kenarları yapıştı. Silikon kalıpta hiç sorun çıkmadı; metal kalıp kullanacaksanız yağladıktan sonra bir de ince galeta unu serpin, çıkarırken kenarlar temiz ayrılıyor.
