This pilaf combines berbere, Ethiopia’s distinctive spice blend, with brown rice and seasonal vegetables in a pressure cooker. Because brown rice takes longer to cook, using a pressure cooker shortens the cooking time.

Add the rinsed brown rice and berbere spice to the vegetables. Stir and sauté for 2 more minutes.
Add the water and salt, close the pressure cooker, and cook over low heat for 25 minutes after it comes to pressure.
Remove the cooker from the heat and let the pressure release naturally for 15 minutes. Fluff the rice with a fork before serving.
Wait for the pressure to release naturally before opening the cooker lid; opening it too soon may leave the rice undercooked.
