Vergun, a crisp Ukrainian carnival cookie, is made by cutting thin strips of unleavened dough, twisting them through the center, and baking them instead of deep-frying. Baking gives this version fewer calories.

Cover the dough and let it rest for 20 minutes.
Roll the dough thin and cut it into long strips. Cut a slit in the center of each strip, then pull one end through the slit to twist it.
Bake the strips in a preheated 190°C / 375°F oven for 15 minutes, until golden. Sprinkle with confectioners’ sugar once cooled.
Do not try to cut the dough into strips before it rests, or it may tear easily while twisting. Contains gluten (flour) and egg.
