Once cool, peel away the outer membrane from the bite-size pieces of sweetbread.
Sauté the onion and apple slices in butter, then add the veal sweetbreads and cook for 12 minutes, until lightly browned on all sides.
Add the lemon juice, salt, and black pepper. Cook for another 2 minutes, then serve hot.
Transfer the sweetbreads to ice water immediately after boiling; otherwise, removing the membrane becomes much harder. Do not stir them too often in the pan; browning the outside helps preserve the tender interior. Contains an allergen: dairy (butter).
