Vitel toné is an Argentine adaptation of the Italian vitello tonnato, a fixture on New Year’s tables: boiled, chilled beef is sliced paper-thin and covered with a sauce of tuna, anchovies, and capers. It is served cold during the December heat and prepared 1 day ahead. The beef must be thoroughly chilled to slice thinly.

Simmer the beef

Put the beef in 2 liters of cold water with the coarsely chopped carrot, onion, bay leaf, peppercorns, and salt. Bring to a boil and skim off any foam. Reduce the heat and simmer for 75–80 minutes, until a skewer slides in easily. Do not let it boil vigorously or the meat will fall apart into strands.

Cool the beef in its broth

Remove the pot from the heat and let the beef cool in its broth. Transfer it with the broth to a covered container and refrigerate. Reserve 150 ml broth for the sauce.

Make the sauce

Blend the tuna, anchovies, capers, hard-boiled egg yolks, and broth until smooth. Add the mayonnaise and lemon juice and mix. The sauce should slowly flow from a spoon and be thick enough to coat a slice; if it is too thick, add a few spoonfuls of broth.

Slice the beef

Remove the chilled beef from the broth and pat it dry. Using a sharp knife or meat slicer, cut it across the grain into 2–3 mm slices. They should be thin enough to look almost translucent.

Arrange the platter

Arrange the slices on a wide platter, overlapping them slightly, and spoon sauce over each layer. Make sure the top layer is completely covered. Cover the platter with plastic wrap and refrigerate.

Serve

Garnish the chilled platter with whole capers and thin lemon slices, and serve cold.

Reminder

Chill the beef in its cooking liquid in the refrigerator for at least 4 hours; warm meat will fall apart instead of slicing thinly. Refrigerate the sauced platter for at least 2 hours before serving so the sauce can flavor the meat.

Hamsiyi azalttım, ton balığı zaten tuzlu geldi bana. Sosu hazırlarken tuz eklemeyip önce tadına baktım, hamsi ve kaparinin tuzu çoğu zaman yetiyor; tuzu sona bırakmak bu soslarda genel bir kural olmalı.

Kapariyi sosun içine çekmeyip bir kısmını üste serptim, hem görüntü hem ısırıkta tuzlu nokta oluyor. Kapariyi kullanmadan önce durulamayı da unutmayın, salamurasıyla koyduğum ilk sos fazla tuzlu çıktı.

Dilimleri mümkün olduğunca ince kestim, kalın kesince sos ete oranla az kalıyor. Eti tamamen soğuduktan sonra, mümkünse bir gün buzdolabında beklettikten sonra kesmek de ince dilim almayı kolaylaştırıyor.
