This traditional Turkish candy is made by cooking cornstarch and sugar for a long time, layering the mixture with walnuts, and letting it set. Dusted with powdered sugar, it is a classic treat served with tea.
Bring the sugar and water to a boil over medium heat. Add the lemon juice and boil for 10 minutes.
Mix the cornstarch with cold water until smooth and free of lumps.
Slowly add the dissolved cornstarch to the boiling syrup. Cook over low heat, stirring constantly, for 35–40 minutes until thick and sticky. When it falls from the spoon, the mixture should stretch into a thread.
Add the walnuts and stir.
Pour the mixture into a pan dusted with powdered sugar. Sprinkle powdered sugar on top and smooth the surface. Let it rest at room temperature for at least 6 hours, preferably overnight.
Cut into cubes, coat in powdered sugar, and serve.
Store in an airtight container at room temperature for 3 weeks to keep moisture out. Allergens: according to the ingredient list, contains tree nuts. Check product labels for other allergens in packaged products.
