This whole-grain horchata ice cream is a frozen take on the Mexican drink, made by soaking brown rice with cinnamon, blending and straining it, then freezing the rice milk with cream. Straining the rice mixture to the right consistency takes a little patience.

How to make it?

Soak the rice

Soak the brown rice in hot water with a cinnamon stick for 240 minutes.

Strain

Remove the cinnamon stick and blend the rice with its soaking water. Strain it through a fine-mesh sieve to make rice milk.

Mix with the cream

5 min

Whisk the rice milk with the cream and sugar.

Freeze

240 min

Pour the mixture into a wide container. Freeze for at least 4 hours, stirring it with a fork every hour.

Reminder

Do not shorten the soaking time, or the rice milk may not develop enough flavor. Stir the mixture with a fork every hour to prevent large ice crystals from forming. Allergen: contains milk and dairy products.
