A skillful Turkish pastry, yaprak boregi is made by hand-rolling paper-thin sheets of dough, brushing them with melted butter, stacking them in layers, and baking until flaky. Rolling the sheets to an even thickness takes the most practice.
Knead the flour, egg, warm water, cooking oil, and salt into a smooth dough.
Cover the dough with plastic wrap and let it rest at room temperature for 30 minutes.
Divide the dough into equal pieces, dust with starch, and roll into paper-thin sheets.
Brush the dough sheets with melted butter, stack them, and shape them in a large baking pan.
Bake in an oven preheated to 190°C / 375°F for 25 minutes, until the layers are golden.
After rolling out the dough sheets, cover them with a damp cloth; they dry out and crack quickly when exposed to air. Allergens: contains wheat (gluten), eggs, and dairy (butter).
