This cracked wheat pickle is a little-known winter drink and pickle made by fermenting red beets and coarsely cracked wheat in brine in a jar for several weeks. The wheat ferments along with the beets and adds a mild grain note to the tangy flavor.

How to make it?

Boil the cracked wheat

20 min

Boil the cracked wheat in plenty of water for 20 minutes, until tender. Drain and let cool.

Make the brine

Mix the salt into the water until fully dissolved, making sure the brine is lukewarm.

Fill the jar

10 min

Place the sliced beets, cooked cracked wheat, and garlic cloves in a wide-mouth jar. Cover them completely with the brine.

Ferment

14400 min

Close the jar lid loosely and ferment in a dark place at room temperature for 10 days, until the mixture turns tangy and cloudy.

Reminder

During fermentation, slightly loosen the jar lid once a day to release the gas; if sealed tightly, the jar may burst.
