Zalabia is an Iraqi dessert for large gatherings, made by frying balls of yeasted dough and dipping them in syrup while hot. The dough balls can be frozen before frying, making advance preparation possible.

How to make it?

Proof the Dough

Dissolve the fresh yeast and sugar in warm water and let it foam for 10 minutes. Add the salt to the flour, then stir in the yeast mixture to make a pourable, custard-like batter. Cover and let it rise in a warm place for 45 minutes.

Make the Syrup

Bring the sugar, water, and lemon juice to a boil. Simmer over low heat for 8 minutes, until slightly thickened, then set aside.

Fry

Heat the cooking oil over medium heat. Drop spoonfuls of batter into the hot oil to form small balls and fry for 6 minutes, until golden on all sides.

Dip in the Syrup

Remove the fried dough balls with a slotted spoon and immediately dip them in the hot syrup. Let them sit for a few seconds, then transfer them to a serving plate.

Reminder

Check the oil temperature; oil that is too hot will brown the outside quickly while leaving the inside raw. Dip the dough balls in the hot syrup as soon as they are fried; once they cool, they will not absorb the syrup as well. Allergen: contains gluten (wheat flour).

Hamuru gece önceden hazırlayıp buzdolabında bekletmiştim, ertesi gün oda sıcaklığına gelince kızartmaya devam ettim ve hiçbir sorun çıkmadı; 45 dakikalık mayalanma ertesi sabah bile canlı kaldı, misafirler için gerçekten pratik oldu.
