A simple example of the Turkish tradition of cooking vegetables in olive oil, this dish combines pumpkin slices with onion and tomato, air-fried until tender. With no added sweetener, it offers a sweet-savory option to serve cool at breakfast.

How to make it?

Prepare the pumpkin

Peel the pumpkin and cut into slices half a centimeter thick.

Sauté

Sauté the onion in olive oil for a few minutes, add the tomato and stir in the salt.

Cook in the air fryer

Toss the pumpkin slices with the onion and tomato and arrange in the air-fryer basket. Cook at 180°C / 355°F for 20 minutes. If you do not have an air fryer, bake in an oven preheated to 180°C / 355°F for the same amount of time.

Serve

Scatter with dill and serve lukewarm or cold.

Reminder

Arrange the pumpkin slices in a single layer in the basket. Piled-up slices will not cook evenly.
