Zhent, a traditional energy snack from the Kazakh steppe, is made by kneading toasted millet flour with honeyed butter flavored with cinnamon and cardamom, then pressing it into a mold. With no cooking required, it can be a last-minute addition to a picnic basket.
Toast the millet flour in a dry frying pan for 8 minutes, stirring occasionally, until fragrant.
Melt the butter with the honey, then stir in the cinnamon, ground cardamom and salt.
Combine the toasted millet flour with the honey mixture and knead for 7 minutes, until it comes together in a mass.
With wet hands, press the mixture into a small tray in an even layer. Leave to cool for 5 minutes, then slice.
The mixture sticks everywhere if you press it into the mold with dry hands. Lightly wetting your hands makes the job much easier. Allergens: contains milk and dairy products.
