A classic at German winter markets, Zimtsterne can fit a keto diet because the dough uses ground almonds instead of flour and is naturally low in carbohydrates. The star-shaped cookies are finished with a smooth white glaze.

Step by Step

How to make it?

1

Make the Dough

10 min

Beat the egg whites with the erythritol until stiff. Gradually add the ground almonds and cinnamon, then knead.

2

Cut Out the Stars

5 min

Dust the surface generously with ground almonds, roll out the dough to 1 cm thick, and cut out stars.

3

Bake

13 min

Beat the second egg white with the erythritol and brush it over the stars. Bake in an oven preheated to 150°C / 300°F for 13 minutes, before the glaze starts to bubble.

Reminder

Sprinkle plenty of ground almonds on the dough as you roll it out; because it contains no flour, it is sticky and can fall apart easily. Allergens: contains tree nuts (almonds) and eggs.
