This keto one-pot dish uses grated zucchini instead of traditional binders to hold the meatballs together, then cooks them in tomato sauce in a pressure cooker in just a few minutes. Reheat for a quick late-night snack.

Step by Step

How to make it?

1

Prepare the meatball mixture

10 min

Knead the ground beef, squeezed zucchini, egg, half the onion, cumin and salt together. Shape into meatballs of about 25 g each.

2

Sauté the sauce base

5 min

Heat the olive oil in the pressure cooker. Add the remaining onion and garlic, then add the tomato and Turkish red pepper flakes. Sauté for 5 minutes.

3

Cook the meatballs in the pressure cooker

10 min

Arrange the meatballs in the sauce and close the lid. Once the pressure cooker whistles, cook for 10 minutes.

4

Release the pressure and serve

3 min

Remove the cooker from the heat and allow the pressure to release naturally. Serve hot.

Reminder

Squeeze the zucchini thoroughly before adding it to the mixture; excess water can cause the meatballs to fall apart in the pressure cooker. Allergen: contains egg.
