Zulbiye is a Malatya dessert made by rolling dough thin with starch, layering it with walnuts, folding it, deep-frying it, and soaking it in syrup while hot. Since it is not baked, the fat between the layers steams and separates them, making the pastry much puffier than baklava. Starch is essential when rolling the dough: flour will make the layers stick together.

How to make it?

Make and cool the syrup

Bring the sugar and water to a boil and simmer over low heat for 12 minutes. Add the lemon juice just before removing from the heat. Pour the syrup into a wide dish and let it cool. For fried desserts, dipping hot dough into cold syrup keeps the crust crisp.

Knead the dough

10 min

Combine the flour, salt, egg, water, and oil. Knead for 8 minutes, until you have a dough that does not stick to your hands and is slightly firmer than an earlobe. Shape it into a ball, cover with a damp cloth, and let it rest.

Roll, fill, and fold

25 min

Mix the walnuts with the sugar and cinnamon. Divide the dough into eight balls and roll each one out with starch to the thinness of a handkerchief. Stack four sheets, generously sprinkling starch and the walnut mixture between them, then fold all four edges toward the center to make square packets. Press the edges closed with your fingers.

Fry and dip in syrup

25 min

Heat the oil to 165°C / 330°F. The temperature is right if a small piece of dough sinks and then quickly rises to the surface. Fry the packets in small batches, turning them until the layers separate and puff up and both sides are light golden brown. Drain on paper towels, then dip them in the cold syrup for 1 minute while hot and transfer to a strainer.

Reminder

Cover the kneaded dough and let it rest for 30 minutes; this resting time is not included in the recipe time. Dough that has not rested will spring back under the rolling pin and will not roll thin, even with starch.
