Munggo stew is a simple Filipino dish made by simmering boiled mung beans with sautéed onion, garlic and tomato paste, then finishing with spinach and fish sauce. The salty, umami note of the fish sauce balances the earthy flavour of the beans.

How to make it?

Sauté the base

Heat the oil and add the onion and garlic, cooking until fragrant.

Add the paste

Stir in the tomato paste and cook briefly, then mix in the fish sauce.

Simmer the beans

10 min

Add the boiled mung beans and water and bring to a simmer, cooking over low heat for 10 minutes.

Finish with spinach

5 min

Add the spinach and season with black pepper, cooking for another 5 minutes until the leaves wilt, then remove from the heat.

Reminder

Add the fish sauce at the very end — boiling it too long sharpens the salt and can turn it bitter. If you skip skimming the foam while boiling the beans, the stew can taste slightly bitter. Allergens: contains fish (fish sauce).

If you cannot find fish sauce, balance the salt with a little soy sauce instead; the umami depth will be slightly lighter but the dish still works.
