Basic Plate Garnishing Techniques
Learn basic garnishing rules that add visual depth to a plate, techniques for applying sauces, and how to choose the right garnish.
What Will You Learn in This Lesson?
- Apply the odd-number rule and asymmetrical placement on a plate.
- Use negative space deliberately to avoid overcrowding the plate.
- Correctly apply one of the sauce-drizzling techniques: a swoosh, dots, or a base layer.
- Choose an edible, functional garnish that pairs with the dish.
- Garnish at the right time, immediately before serving.
Equipment You’ll Need
Required
- Fine-tip tongs or tweezers
- Small offset spatula
- Squeeze bottle with a fine tip
- Small brush (for painting on sauce)
Optional
- Stencil or cutter
- Piping bag
Alternative
- If you do not have tweezers: use a clean fork to place small items on the plate.
Safety
- Always remove any toothpick or needle used for garnishing before serving; no inedible item should be left on the plate.
- Make sure any flower or leaf used as a garnish is edible; flowers sold for decorative purposes are not edible.
- Do not put raw vegetable or herb garnishes on a plate without washing them.
