Taste Balancing Methods
Learn how the five basic tastes balance one another and how to correct an overly salty, sour, flat, or spicy dish using taste itself.
What Will You Learn in This Lesson?
- Explain how the five basic tastes (salty, sweet, sour, bitter, and umami) affect one another
- Balance an overly salty dish by adding sourness or sweetness
- Mellow an overly sour dish with sweetness or fat
- Brighten a flat flavor by adding acid
- Balance heat with fat or dairy
Equipment You’ll Need
Required
- A separate tasting spoon
- Small tasting bowls
- A 4 ml measure (for small additions)
- Pen and notebook
Optional
- Dropper or pipette
- Small scale (for precise measurements)
Alternative
- If you do not have a separate tasting spoon, wash the spoon with hot water after each taste
Safety
- Do not dip a spoon you have tasted from back into the pot.
- Do not sip hot sauce directly from a spoon; first transfer it to a small bowl and let it cool.
- Do not taste too many times in a row; your palate will tire and your taste perception will be affected.
