Fish skin is the thin outer layer covering a fish's flesh. In fish cooked skin-on, it turns crisp when fried; in some recipes it's peeled off and removed instead. On oily fish, the skin is especially flavorful.
Where It's Used
“Cook the fish skin-side down in the pan until crisp.”
