Brunoise is a cutting technique obtained by dicing vegetables or fruit into small cubes about 2-3 millimeters on each side. The ingredient is first cut into thin strips (julienne), then these strips are cut crosswise to obtain equal small cubes. It is often used in preparing soup, sauce, and garnish.
