Carpaccio cut is slicing raw-eaten ingredients such as beef tenderloin or fresh fish into paper-thin, nearly transparent slices. Slice thinness is generally made easier by lightly freezing the meat. It is the basic preparation technique of the classic Italian appetizer carpaccio.
