Escalopine describes smaller and thinner meat slices than escalope, cut from veal in Italian cuisine. It comes from the Italian word scaloppina and is generally coated in flour or breadcrumbs and fried in butter for use in scaloppine dishes. Although smaller in size than escalope, the cutting logic is the same.
