Shrimp Vein

Shrimp vein is the dark-colored intestinal thread running along a shrimp's back. Because it contains sand and grit, it's preferably removed before cooking. This process is called deveining.

Where It's Used

“Score the back of the shrimp and carefully remove the vein with the tip of a knife.”
