Matignon is a vegetable mixture made by cutting carrot, onion, and celery smaller and more uniformly than mirepoix, then gently sweating them in butter. Unlike mirepoix, it is generally cut and cooked fine enough to be served together with the dish as a garnish. Some recipes enrich it with the addition of ham.
