Modeling Chocolate

Modeling chocolate is chocolate brought to a pliable dough-like consistency by adding glucose or sugar syrup to melted chocolate. It is shaped by hand and used to make figures, flowers, and cake coverings. It can be molded much like marzipan but tastes of chocolate.
