Autolyse

autolyse · o-to-liz

un ve suyun ön dinlenmesi

Autolyse is a preliminary stage in which flour and water are simply mixed and rested for a while before yeast and salt are added. During this resting period the flour absorbs the water and gluten develops on its own, making the dough more extensible. It shortens kneading time and makes the dough easier to work.

Where It's Used

“For autolyse, mix the flour and water and let it rest for about half an hour.”
