Final Proof

final proof · son fer-man-tas-yon

şekil verilmiş hamurun son mayalanması

Final fermentation (proofing) is the last rising stage of the shaped dough before it goes into the oven. During this process the dough approaches its final volume and prepares to develop an open interior structure once baked. Over- or under-proofing negatively affects the bread's rise.

Where It's Used

“During final proofing, press the dough with a finger and judge readiness by its springback.”
