How to Fix Ayran When the Yoghurt and Water Separate

If yoghurt and water separate while making ayran, with the yoghurt settling at the bottom, the fix is to whisk or blend it again briefly; separation usually comes from not mixing thoroughly enough in the first place and clears up with a short whisk.

Why does ayran separate?

The protein and fat in yoghurt form a balanced suspension once mixed with water, and if that mixture is not whisked enough, it can break down over time and the yoghurt settles back out. Ayran made with low-fat or light yoghurt has a lower protein content, so this separation happens faster than with full-fat yoghurt.

Adding cold water straight from the fridge can also speed up separation, since a sudden temperature difference can weaken the bond the proteins form with the water. Adding salt too early is another factor, since it can slightly affect the yoghurt's protein structure and make separation more likely.

How do you fix separated ayran?

Blending separated ayran for thirty to forty seconds, or whisking it briskly with a wire whisk in a deep bowl, turns the yoghurt and water back into a smooth mixture. Without a blender, shaking it vigorously for a few minutes in a tightly sealed bottle has a similar effect; just make sure the lid is on securely.

If your ayran separates every time, adding the salt last while mixing the yoghurt and water, and whisking a little longer than usual, gives a more lasting fix. Whisking the yoghurt while it is closer to room temperature blends more thoroughly and lastingly with the water than yoghurt fresh out of the fridge.

How do you prevent separation at the table?

Giving the finished ayran one more quick shake right before serving clears up any slight separation that built up while it sat before pouring. Ayran mixed in a big batch and left in the fridge for hours will separate almost inevitably, so making it just before serving, or giving it a quick whisk right at serving time, is the most practical habit.

Do different types of yoghurt affect separation?

Ayran made with strained yoghurt forms a more stable mixture with water thanks to its higher protein content, and resists separating a little better than regular yoghurt does. With home-made yoghurt, the protein structure can vary slightly batch to batch depending on the fermentation time and the fat content of the milk used, which can make the same recipe separate faster some times than others.

Making ayran with a stand mixer's whisk attachment instead of whisking by hand can also create a finer, more stable foam that delays separation; ayran made this way tends to stay smooth for longer than ayran whisked by hand. Using sparkling mineral water instead of still water also gives ayran a lighter, foamier texture and can slightly delay separation. Keeping ayran in a jug with a screw-on lid rather than an open glass pitcher also makes it easier to give it a quick shake each time, so separation does not go unnoticed. Adding the water gradually rather than all at once while mixing can also help it blend more smoothly with the yoghurt.
