Why Shouldn't Spice Jars Be Stored Next to the Stove?

Spice jars should not be kept next to the stove because the heat and steam released during cooking evaporate the volatile aroma compounds inside spices far faster than normal; as a result, a spice can lose much of its flavour within just a few months.

How does heat affect aroma compounds?

A spice's characteristic smell and taste come from the volatile oils inside it. Those oils evaporate slowly even at room temperature, but the rate climbs sharply as heat rises. A spice rack sitting right next to the stove rises noticeably above normal room temperature for several minutes every time a meal is cooked; those repeated heat spikes are the main driver behind faster flavour loss.

Why does steam create a separate problem?

Steam rising from a simmering pot can condense on the lids of jars sitting right above or beside the stove, leaving behind moisture. That moisture can set the stage for clumping in ground spices, and over time for a small amount of mould growth; this effect shows up more clearly in spices like ground red pepper and cumin.

Shelves next to the stove are usually in an open spot exposed to light; light, like heat, speeds up the breakdown of volatile oils. A spice in a clear glass jar that is exposed to both light and heat fades and loses its flavour far faster than the same spice kept in a closed cupboard.

The ideal storage spot is a cool, dark, dry cupboard or drawer, away from the stove and oven. A closed cupboard protects against both temperature swings and direct light; spices kept under those conditions can hold their aroma for months, even years longer than ground ones kept out in the open.

Metal kutu ışığı tamamen keser ama ısı yalıtımı sağlamaz, bu yüzden yine de ocaktan biraz uzağa yerleştirmek en iyi sonucu verir.
