How Many Calories Are in a Portion of Baked Chicken Thigh?

A portion (about 150 g) of baked skinless chicken thigh contains roughly 260-280 calories. That comes from thigh meat naturally carrying more fat than breast meat — the same fat that also makes thigh juicier and more flavourful.

How much difference does the skin make?

The same portion cooked with the skin on comes to 340-360 calories; the skin alone adds about 80 calories, since it is made up almost entirely of fat. Some of the fat under the skin renders out during baking, but that does not lower the calories much unless the skin itself is removed before eating.

Removing the skin after cooking gives a different result from removing it before; if the skin stays on the meat while it bakes, the thigh bastes itself in its own fat and needs no extra oil added. How do marinades and sauces change the calories?

A marinade of olive oil, garlic and lemon adds 30-50 calories per thigh; that addition usually ends up lower than it sounds, since most of the marinade runs off into the tray during baking. A thigh marinated in a sugary sauce like honey-mustard can carry 60-80 more calories, since these sauces caramelise onto the meat as it cooks.

How does the cooking method change the calories?

Baking needs noticeably less oil than pan-frying; a thigh fried in a pan can carry 60-80 more calories than one baked in the oven, since some of the oil added to the pan gets absorbed into the meat. Grilling comes out close to baking in calories, though it can sometimes end up even a touch lower, since the fat that drips off during grilling separates fully from the meat.

A thigh boiled in a pressure cooker is the lowest-calorie cooking method of all, since it needs no oil whatsoever; but this method does not give the browned flavour that baking or grilling produce on the outside. Whichever method is chosen, the thigh's own fat already sets a certain calorie baseline — how much extra fat gets added on top of that is what really drives the difference.

Marinasyonun büyük kısmı tepsiye akıyor dediniz ama etin üzerinde kalan kısmı yine de eklenmiş sayılmaz mı, yoksa gerçekten kalori farkı bu kadar az mı oluyor?

Etin üzerinde kalan ince tabaka gerçekten eklenmiş sayılır, o yüzden tamamen sıfır demiyoruz, 30-50 kalori de zaten bu kalan kısımdan geliyor. Ama tepsiye dökülen kısmı da hesaba katarsak marinasyon kabındaki toplam miktara göre etin aldığı pay göründüğünden daha azdır.

Göğüs eti yerine but kullanmaya başladım, kurumuyor gerçekten ve yazdığınız gibi deriyi pişirirken bırakıp yemeden önce çıkarınca hem lezzet kalıyor hem kalori artmıyor. Bal-hardal sosunu da denedim ama o gerçekten daha kalorili hissettiriyor, haklısınız.
