Why Is Preheating Empty So Critical?

A steel pan's surface is microscopically porous; as the pan heats, the metal expands and those pores tighten up. Food placed in a cold pan gets caught in pores that have not closed yet and locks itself onto the surface — which is why this step cannot be skipped.

How Can You Tell It Is Hot Enough?

Drop a few beads of water into the pan — if they bead up and skitter across the surface instead of spreading flat and evaporating, the pan is ready. If the water sizzles and disappears instantly, it is not hot enough yet; wait another minute.

Tavayı yeterince ısıtmadan et koydum, yalnızca 1 dakika bekledim ve köfteler tavaya yapışıp parçalandı. Su testini denemeden acele ettiğim için sonucu berbattı, ikinci denemede 3 dakika beklemem işe yaradı.
