This recipe, made by flouring skinned skate, frying it in hot oil, and then mixing it with sautéed onions, is one of the lesser-known but flavorful options of Marmara coastal cuisine. With its boneless composition, it's a practical main dish.
Salt the skinned skate pieces and coat them in flour.
Fry the fish pieces in plenty of hot oil until both sides are golden, then transfer to paper towels.
Sauté the onions with red pepper flakes in a little oil until softened.
Gently combine the fried fish pieces with the sautéed onion and serve hot with chopped parsley. Note: don't over-mix the fish with the onion, or the fried coating may fall off.
Important: Skate skin must always be peeled before cooking, or it results in a tough, rubbery texture. Allergen: contains fish and gluten (flour) only. Caution: don't drop too many floured pieces into the hot oil at once — if the oil temperature drops, the fish will absorb oil.
If you soak the skate in lemon water for a few minutes before sautéing it, you noticeably reduce the fish's characteristic sharp smell.
