Why Does Chocolate Seize When You Melt It?

Chocolate seizes because a tiny amount of water gets into it while it melts. Even a single drop is enough to make the sugar and cocoa solids clump together into a grainy, sand-like mass instead of staying smooth; this is what bakers call "seizing".

Why does just a few drops cause so much damage?

Melted chocolate is really a suspension of solid particles held in fat. When a small amount of water gets in, the sugar dissolves into it, and the now-damp sugar crystals stick to each other and drag the dry cocoa particles along with them. The result is a thick, grainy mass instead of a smooth liquid. Interestingly, a large amount of water does not cause the same problem; it is specifically a small amount of moisture that ruins the texture, because there is not enough liquid to fully dissolve the sugar.

This is why every bowl, spoon and the lid of a double boiler used for melting chocolate needs to be completely dry. Even a small cloud of steam condensing on the bowl can trigger the same reaction. Stirring with a damp spoon, or letting a single splash land on the rim of the bowl, is a small enough mistake to look harmless but is still enough to cause the same result.

Can seized chocolate be saved?

If only a little water got in, the fix is to add more liquid rather than fight the problem: stirring in a bit more warm liquid, such as milk, cream or melted butter, usually brings the smoothness back, because there is now enough liquid to dissolve the sugar properly. Chocolate rescued this way cannot be moulded into bars, but it still works well as a sauce or in a ganache.

The safest approach is to make sure the melting bowl and tools are bone dry from the start, and to melt the chocolate over low, steady heat while stirring often. When using a microwave, stopping to stir at short intervals prevents both seizing and localised scorching.

Some recipes deliberately add liquid to chocolate from the start; when making a chocolate sauce, for instance, enough milk or cream is used from the very beginning, so seizing never happens because there is already enough liquid to dissolve the sugar. The problem shows up specifically with plain, liquid-free chocolate melted for moulding or coating.

Professional confectionery has a separate process called tempering, which should not be confused with seizing: tempering means heating and cooling chocolate through specific temperature ranges to set its crystal structure, has nothing to do with water contact, and if done incorrectly leaves the chocolate dull and streaked with white blooms rather than turning it into a grainy, sand-like mass the way seizing does. The two problems can look similar at a glance, but their causes are completely different.

There is also a difference between types of chocolate: milk and white chocolate are more sensitive to water than dark chocolate because of their milk powder and extra sugar content, and they begin melting at a lower temperature, so overheating them risks scorching and seizing at the same time. That is why milk and white chocolate are usually melted at a slightly lower heat than dark chocolate, with more frequent stirring.

Topaklanan çikolatayı süt yerine biraz sıcak krema ekleyerek kurtardım, akışkanlığı süte göre daha çabuk geri geldi ve sonunda ganaj için gayet iyi bir kıvam aldı.

Krema hem yağ hem su içerdiği için gerçekten daha hızlı toparlar, güzel bir gözlem. Kalıba dökülecek bir çikolata değilse bu yöntemi rahatlıkla önerebilirim.

Çikolatayı sos tenceresinde değil de doğrudan tencere tabanında eritmeyi denedim, dip tarafı biraz katılaştı. Bu da su temasıyla aynı etkiyi mi yaratıyor yoksa sadece aşırı ısınma mı?
