Getting chocolate glossy and crisp when tempering it comes down to cooling the melted chocolate to a specific temperature and then gently warming it back up; this cycle brings the fat crystals in the chocolate into a stable structure. Properly tempered chocolate snaps cleanly and leaves no dull patches on the surface.
Chocolate that sets without tempering usually looks matte, melts at a fingertip's touch, and breaks with an uneven surface. That is why tempering is not a step that can be skipped in coating or moulding work — it is what determines the result. Simply melted chocolate, used to coat fruit, nuts or a cake, never reaches the same gloss or snap as tempered chocolate.
What temperatures does chocolate get tempered at?
Dark chocolate is melted at around 45-50°C, then cooled to about 27-28°C, and finally gently rewarmed to 31-32°C before use. Milk and white chocolate are worked one or two degrees lower, since the milk solids they contain can scorch at a lower temperature.
Using a kitchen thermometer to track this is far more reliable than judging by eye. Missing these ranges by even a couple of degrees breaks down the crystal structure once the chocolate cools, meaning the whole process has to start over.
How does the seeding method work?
In the seeding method, small pieces of untempered solid chocolate are stirred into the hot melted chocolate to bring the temperature down gradually. New pieces should not be added until the previous ones have fully melted, and stirring should continue until the target range is reached.
This method needs less equipment than working on a marble slab, making it a practical option for home kitchens. Using solid chocolate equal to about a fifth of the total gives a more controlled drop into the target range.
How do you test whether tempering worked?
To check whether tempering succeeded, dip the tip of a spoon into the chocolate and leave it at room temperature for a few minutes; a glossy, smooth surface shows the tempering was done correctly. Whitish streaks or blotches mean the crystal structure has broken down and the process needs to be repeated.
If the chocolate has not yet been poured into a mould, the temperature can simply be brought back into range to fix it.
What are the most common mistakes?
The most common mistake is melting chocolate quickly over high heat, which disrupts the crystal structure and makes it harder to fix afterward. Another frequent error is letting water get into the melting bowl — even a single drop can make the chocolate seize.
Working in a humid environment causes a similar problem, so tempering should be done in a dry, cool part of the kitchen. Direct contact with a flame or an overly hot pot can also scorch the chocolate, which is why a bain-marie is the safest way to melt it.
How should tempered chocolate be stored?
Tempered chocolate that's been moulded should be stored somewhere cool, dry and out of direct sunlight at room temperature; refrigerating it can cause dull patches from condensation forming on the surface. A spot that stays around 18-20°C keeps the shine intact the longest.
Properly stored tempered chocolate can hold its snap and gloss for weeks, so there's no need to eat coated pieces or bars right away.
