Frozen fruit releases so much liquid when thawed because, during freezing, the water inside the cells turns into ice crystals that tear the cell walls apart. Once the fruit thaws, water flows freely out through those torn walls.

How do ice crystals break down the cell wall?
As fruit freezes, the water inside its cells turns into ice crystals that take up more space than liquid water did. As the crystals grow they push outward against the thin, flexible cell wall, and that wall usually tears.
The slower the freezing, the larger the ice crystals grow and the more damage the tissue takes; that is why fruit that freezes slowly in a home freezer tends to release more liquid when thawed than fruit frozen quickly in an industrial blast freezer.
Which fruits release the most liquid?
Fruits with a high water content and thin cell walls, like strawberries, cherries and watermelon, become noticeably wet and soft once thawed. Starchier fruits like bananas tend to darken and turn mushy rather than release much liquid.
Firmer fruits such as apples and pears usually end up with a mealy, loose texture after being frozen and thawed.
How do you stop it from turning mushy in a salad or dessert?
Thawing frozen fruit slowly in the fridge rather than at room temperature keeps more of the water inside the fruit. Instead of pouring off the liquid that drains out, collecting it in a separate bowl and stirring it into syrup or a smoothie keeps it from going to waste.
In baked fruit desserts, adding the fruit while it is still frozen and cooking it briefly sets the cells with heat before they fully thaw, which limits how much they fall apart.
Do precautions taken before freezing actually help?
Coating fruit lightly in sugar or lemon juice before freezing holds back some of the water that escapes the cells, slowing down how quickly the texture falls apart. Freezing the pieces spread out on a tray before bagging them also keeps them from clumping into one solid block of ice.
Even so, the freeze-thaw cycle changes the cell structure in a way that cannot be reversed, so thawed fruit will never stay as firm as fresh fruit — that is simply how it works.
Is freezer burn the same thing as this liquid loss?
Freezer burn is a separate issue from liquid loss: air trapped inside the bag slowly evaporates moisture off the surface of the fruit, leaving dry, whitish patches behind. Those patches are compromised in both texture and taste, and they become even more obvious once the fruit thaws.
Wrapping fruit tightly so no air can get in, or freezing it in a vacuum-sealed bag, greatly cuts down on both freezer burn and the extra water loss that comes with sitting in the freezer for a long time; freezing it in small portions meant to be used within about two months also lowers that risk.
Labeling the bag with a freezing date is a practical habit too; knowing how long a given batch of fruit has been in the freezer makes it much easier to predict both the freezer-burn risk and how watery it will turn out once thawed. Because opening and closing the freezer door often causes temperature swings that let ice crystals grow, it is also better to store fruit toward the back, in the more temperature-stable interior, rather than on shelves near the door.
