Liquid running low faster than expected in a pressure cooker usually comes from a gasket that is not sealing tightly, or from the heat being left higher than it needs to be; once you notice the steam pressure, the burner should be turned off and the cooker allowed to depressurize safely, adding a little hot water and continuing if needed.
Why does liquid run out faster than expected?
A pressure cooker turns the liquid inside into steam and cooks using that steam's pressure; a gasket that is worn or not seated properly lets some of that steam escape, and that leak burns through far more liquid than it should. Leaving the heat too high has a similar effect, since a pressure cooker needs the heat turned down once it reaches pressure — left on high, it burns through liquid much faster than intended.
Starting with less liquid than a recipe calls for can also lead to it running out as cooking stretches on, with the bottom of the pot starting to scorch; this risk is especially high in meat and legume dishes that need longer cooking times.
What should you do if liquid runs low?
The moment an unusual sound or smell comes from the cooker, the burner should be shut off right away and the pressure released using the manufacturer's recommended safe method — cold-water release or natural release — before anything else; the lid should never be forced open while pressure remains. Once pressure has fully dropped, the lid can be opened and the liquid checked.
If liquid has clearly run low, adding boiling water is safer than adding cold water, since a sudden temperature swing can both stretch out cooking time and, in some cookers, stress the metal. If the bottom has darkened slightly but there is no burnt smell, the dish can usually continue without issue; if there is a clear burnt smell, that portion should be set aside and cooking continued with the rest.
How do you avoid this happening again?
Checking the gasket regularly and replacing it once it loses its flexibility is the most effective way to prevent liquid loss from leaking. Turning the heat down as soon as the cooker reaches pressure, keeping it just high enough to maintain that pressure, also prevents liquid from burning off unnecessarily fast.
Does risk vary by dish?
Meat and legume dishes that need long cooking times carry a far more noticeable risk of running low on liquid than quick-cooking vegetable dishes; adding a bit more liquid than the recipe calls for gives these a safer margin. Thicker, less liquid dishes — some stews, for instance — start out with less liquid to begin with, which raises the risk of running low even faster, so checking in periodically during cooking matters even more there.
Older pressure cookers, where the pressure indicator can be hard to read clearly, can delay noticing that liquid has run low; the clearer pressure gauges on newer models offer an extra layer of safety in that regard. When trying a recipe for the first time, safely releasing the pressure once, halfway through cooking, to check the liquid level is the most practical way to learn how much a particular recipe burns through in your own pressure cooker.
