For meat to be marinated correctly, a mixture made of acidic, oily, and spicy components must be prepared, the meat must be left in this mixture in the refrigerator for a sufficient time, and the marinating time must be adjusted according to the type of meat. Meat is marinated correctly because the acid and salt in the marinade mixture loosens the meat's fiber structure, both allowing the flavor to penetrate inside and helping the meat cook more tenderly.

Acidic components in the marinade mixture like lemon juice, vinegar, or yogurt partially break down the proteins on the meat's surface, loosening its texture. Meat left for too long, however, can have its fibers soften too much under the acid's effect and turn into a spongy texture; that's why adjusting the marinating time according to the type of meat is important. The oil added to the marinade mixture, meanwhile, both carries the flavor and prevents the meat's surface from drying out during cooking.

What Is the Method for Marinating Meat Correctly?

The following steps should be applied for the meat to be flavorful and tender.

  • An acidic liquid, olive oil, and spices should be added to the marinade mixture.
  • The meat should be placed so it's completely submerged in the marinade mixture.
  • Thin cuts of meat should be marinated for 30 minutes-2 hours, thick cuts for 4-12 hours.
  • Marinating must always be done in the refrigerator, in a closed container.
  • Meat whose marinating time is complete should be lightly drained of excess liquid on its surface before cooking.

What Are the Mistakes Made When Marinating Meat?

Some common mistakes made during marinating negatively affect the result.

  • Marinating meat at room temperature and in the open increases the risk of bacterial growth.
  • Keeping the marinating time too long can cause the meat's texture to become spongy.
  • Keeping the acid ratio too high in the marinade mixture can cause the meat's surface to harden before cooking.
  • Using the leftover marinade liquid as a sauce without cooking it first, since it touched raw meat, is risky in terms of food safety.

What Should Be Considered When Cooking Marinated Meat?

Since the liquid used to marinate the meat has come into contact with raw meat, it must always be boiled before being used again as a sauce. This simple precaution is important for food safety and shouldn't be skipped at the end of the marinating process. Lightly draining excess marinade liquid off the meat's surface before cooking also helps the meat brown better in the pan or on the grill; otherwise, excess moisture can cause the meat to steam and delay browning.

The marinade mixture can also be varied for different types of meat; stronger spices and a longer soaking time are preferred for red meat, while a shorter time and a lighter mixture are enough for more delicate meats like chicken and fish. In delicate meats like fish, long marinating can cause the meat's texture to become overly soft and fall apart under the acid's effect. Whether the container used for marinating is glass, steel, or food-safe plastic is also important; acidic mixtures can react with some metal containers, harming both the taste and the container's surface.

Marinating meat correctly is possible with a balanced mixture, refrigerator storage, and a time suited to the type of meat. When these steps are observed, meat is marinated correctly, its flavor is enhanced, and a more tender result is achieved during cooking. Following hygiene rules during the marinating process shouldn't be overlooked for either flavor or safety.
