How can it be dressed up with sauce and spice?

Tossed in a light dressing of olive oil, lemon and garlic, boiled potatoes turn into a salad-like side, a combination often chosen for light summer dinners. Mixed with cream and grated cheese, boiled potatoes become a heartier version, usually finished with a short spell under the grill to brown the top.

What pairs well with mains?

Alongside grilled meat and chicken, boiled potatoes offer a lighter alternative to fried potatoes, often chosen by people watching their fat intake or following a diet. With fish, boiled potatoes are commonly garnished with parsley and lemon zest, a combination that rounds out the plate without overpowering the fish's delicate flavour.

Added whole or halved to saucy dishes like stews, boiled potatoes soak up the sauce and make the plate more filling; in this use they are usually added in the last 15-20 minutes of cooking so they do not fall apart.

Which combinations should be avoided?

Paired with very heavy, rich sauces — a thick cream sauce, for instance — boiled potatoes can make the plate overly filling and heavy; cutting back the amount of potato or balancing it with a lighter sauce is the better move there. How does the potato variety change the pairing?

How should boiled potatoes be stored?

Leftover boiled potatoes keep in a sealed container in the fridge for 3-4 days; when reheating, avoid too much contact with extra water so they do not turn waterlogged and fall apart. Freezing is not recommended, since the texture turns grainy and watery once thawed.

Boiling with or without the skin also changes the texture and flavour; potatoes boiled in their skin release less starch into the water and hold together better when cut, which is why skin-on boiling is usually preferred for salads.
