Mix the crumbled feta cheese with finely chopped parsley and black pepper. No extra salt is needed since the cheese is already salty.
Roll out the dough thin and cut into three-centimeter squares. Place filling in the center of each square, join the corners to close it, and press the edges firmly to seal.
Boil the mantı in salted boiling water until the dough turns translucent, then drain. Pour the garlicky yogurt over them, sizzle the butter with red pepper flakes and drizzle it on top, and serve hot.
Important: Since the cheese is salty, don't add extra salt to the filling. Contains gluten, dairy, and egg. Press the corners firmly and use a moderate amount of filling so they don't open while boiling. You can freeze the shaped mantı.
If the cheese is very soft, mixing in a little breadcrumb keeps the filling from falling apart. Adding the yogurt sauce and hot butter at serving time gives the best result.
