What does a cake pan actually do?
A cake pan gives the batter its vertical shape and helps heat reach every part of the cake evenly; the deeper the pan, the longer the baking time, since heat takes longer to reach the centre. The pan's material matters too — silicone pans hold heat more slowly, while metal pans heat up faster and speed up baking.
So switching pans means reconsidering both the shape and the baking time.
Which dish can take a pan's place?
A rimmed baking tray gives a thinner, wider cake; baking time drops noticeably compared with a classic pan, since more of the batter is in contact with heat. A pyrex dish gets closest to a pan, especially in place of a square or rectangular one — the cake keeps almost the same shape.
With no pan or dish at all, a temporary form folded up from aluminium foil can work for small portions, though it's not recommended for large cakes, since the foil struggles to support the batter's weight.
What should you watch out for?
When switching pans, the oven temperature can usually stay the same, but baking time should always be checked by eye — the toothpick test (checking whether a toothpick inserted into the centre comes out clean) is the most reliable check no matter which dish you use. With a glass dish, you can drop the oven temperature a few degrees below the original recipe, since glass conducts heat more slowly than metal and holds it longer.
Whichever alternative you use, don't fill it past about two-thirds full with batter, or it can overflow while baking.
What if the size of the alternative dish doesn't match the recipe?
If the dish on hand is noticeably bigger or smaller than the pan called for, the amount of batter should be scaled accordingly; too much batter in a small dish risks overflowing, while a large dish with too little batter gives a thin, dry cake. Measuring the dish's base area and comparing it with the pan size in the recipe is the most practical approach.
If you're using several small dishes instead of one, split the batter evenly and use dishes of the same size — otherwise cakes of different sizes bake at different rates and can't come out of the oven together.
Whatever dish the cake was baked in, let it rest for at least fifteen minutes after it cools and before slicing; this pause keeps it from falling apart when cut.
Whatever dish is used, mixing the batter with room-temperature ingredients still gives a more even texture no matter which pan it ends up baking in.
The first time you try a recipe in a substitute dish, checking every ten minutes near the start is the quickest way to learn how that dish behaves in your particular oven.
