Why does French fries use a two-stage temperature?

Why is it risky if the oil gets too hot?
Once oil passes 200°C, it starts smoking, which means the oil's structure has already begun to break down; the food can burn on the outside quickly while staying raw inside. As soon as smoke appears, the heat should be turned down and the oil given a few degrees to cool.
If the same oil is reused for frying, keep in mind the smoke point drops a bit each time; once it darkens and starts foaming, it should be replaced.
How does adding too much food at once affect the temperature?
