Why does mushroom release its liquid over high heat first?

Mushrooms are largely water, so once they hit the pan, that water comes out fast and pools at the bottom. Add oil before that water has fully evaporated, which takes about 5-7 minutes, and the mushrooms end up looking boiled instead of browned.

A wide pan that fits the mushrooms in a single layer helps that liquid evaporate faster.

At what point should the fat be added?

Adding salt at the start draws out even more liquid through osmosis, which can delay the browning stage by a few minutes. Adding salt after the fat goes in, once browning has started, helps the mushrooms color faster.

This small change in order is one of the simplest ways to get more noticeable browning within the same 7-10 minute window.
