What Do You Do If Your Yeast Won't Activate?

If yeast won't activate, the most likely reasons are that it touched water that was too hot and killed it, it's past its expiry date, or it came into direct contact with salt. The fix is to discard the yeast in use and start again with a fresh packet.

First, a ten-minute test with warm water and sugar shows whether the yeast is really dead — no foam means it's no longer usable.

Why Won't Yeast Activate?

Yeast is a living organism and stays inactive outside certain conditions. Water hotter than about 45°C kills it outright, while water that's too cold just slows it down — either way, the dough may not rise.

Yeast that's past its expiry date, or has been exposed to air for too long after opening, also loses its potency. Mixing it directly with salt is another culprit — salt draws moisture out of the yeast cells and weakens the rise.

Test the Yeast

In a small bowl of lukewarm water (warm enough to feel comfortable on your skin, not hot), stir in a pinch of sugar and a teaspoon of yeast. Wait ten minutes; if foam forms on the surface, the yeast is alive — if nothing happens, it's dead.

Activate a Fresh Packet

If the test fails, discard the yeast entirely and open a fresh packet. Test the new yeast the same way with warm water and sugar and confirm it foams; this step greatly reduces the risk of the dough failing a second time.

Mix It Into the Dough and Knead

Add the foaming yeast mixture to the flour, keeping the salt separate until now, and start kneading. Knead until the dough feels slightly tacky but holds together; add the salt sprinkled in separately at this stage, not mixed directly with the yeast.

Let It Rest in a Warm Spot

Let the kneaded dough rest in a lightly oiled bowl, covered with a damp cloth, somewhere warm and free of drafts, for about an hour and a half. Once it has doubled in size, it's fully risen.

Why Does How You Store Yeast Matter?

An opened yeast packet left at room temperature starts losing potency within a few days, so it should be sealed tightly and kept in the fridge afterward. Fresh yeast has an even shorter window than dry yeast.

Checking the expiry date on the packet before buying, and picking one with plenty of time left rather than one about to expire, saves future disappointment.

Is There a Difference Between Fresh and Dry Yeast?

Fresh yeast is more delicate and lasts only a few weeks in the fridge, while dry yeast can stay potent for months in a sealed packet. If fresh yeast has darkened or developed a sharp smell, it's safer to skip it even if it passes the foam test.

Swapping dry yeast for fresh (or the other way around) at a one-to-one ratio is a common mistake; fresh yeast is usually used at roughly double the amount of dry.

When yeast won't activate, the fix isn't complicated: test it with warm water and sugar, replace it with a fresh packet if it's dead, and let the dough rest at the right temperature. Keeping salt from ever touching the yeast directly is the simplest way to guarantee a good rise. Storing yeast properly and watching the expiry date also keeps the problem from coming back.
