At What Temperature Does Mozzarella Melt for Pizza?

Mozzarella starts to melt around 60-65°C, but the soft, flowing texture and light bubbling a pizza needs usually calls for an oven at 220-250°C for 8-10 minutes. At a lower oven temperature, the cheese melts but doesn't get those golden spots.

Done right, the cheese stays fluid but stringy; too much heat or too much time breaks that texture, separating the fat out and leaving it rubbery.

Why does the oven need to be set so high?

High heat lets the pizza base cook quickly while the cheese melts without stretching too thin; at 220-250°C, mozzarella both melts and picks up golden spots within 8-10 minutes. Getting the same result at a lower temperature takes longer, which can dry out the base.

Preheating the oven for at least 15 minutes means the cheese hits sudden, even heat rather than a slow climb.

How is melting mozzarella in a pan different from the oven?

On the stovetop, in a covered pan, mozzarella usually melts in a short 3-4 minutes, since heat spreads evenly from below and through steam. This method doesn't give the same browning as the oven — the cheese melts softer and flatter.

Pan-melting works well for things like toasted sandwiches, but the oven method suits pizza better.

Why does mozzarella sometimes turn rubbery?

If cheese stays under high heat longer than it should, its fat and water separate and the protein tightens into a rubbery texture. This shows up most clearly once you go a few minutes past the recommended 8-10 minutes.

Low-fat mozzarella is more prone to this toughening than whole-milk mozzarella, which is why fresh, full-fat mozzarella is usually preferred for pizza.

Does shredded or sliced mozzarella melt faster?

Shredded mozzarella melts 1-2 minutes faster than sliced, since it has more surface area, and it spreads more evenly. Sliced mozzarella forms a denser layer, so toward the end of baking, the center can be left slightly undermelted.

That's why working with shredded cheese on a home pizza makes the timing easier to predict.

Does melting time change when mozzarella is mixed with other cheeses?

When mozzarella is mixed with fattier cheeses like kaşar or cheddar, the blend usually melts a touch faster, since higher-fat cheeses conduct heat more readily — the time can shorten by about a minute. Hard, low-moisture cheeses like Parmesan soften rather than fully melt and stay grainy, which is why they're usually added as a scattering on top.

On a pizza with mixed cheeses, putting mozzarella on the base layer and hard cheeses on top gives a more even look and texture.

How do the base and the cheese finish cooking at the same time?

A thin pizza base cooks at roughly the same pace as the cheese, but on a thick base the cheese can already be bubbling while the dough underneath is still doughy; using a pizza stone or a preheated tray helps the base cook faster from below. A sauce that's too watery also leaves the base soggy and slow to cook.

When that mismatch shows up, a practical fix is baking the base plain for a few minutes first and adding the cheese afterward.
