How Can You Tell a Kitchen Thermometer Is Reading Wrong?

A kitchen thermometer is reading wrong when the same piece of meat cooked to the same temperature keeps turning out inconsistent, or when the thermometer doesn't show the correct value at a known reference point, like boiling water.

How do you run the boiling-water test?

At sea level, boiling water reads 100°C (212°F); dip the thermometer into boiling water, wait a few seconds, and if the reading is off by more than 2–3°C (about 4–5°F), the thermometer has drifted out of calibration. Boiling point drops slightly at higher elevations, so a few degrees of difference is expected well above sea level.

The ice-water test works the same way: fill a container with water and plenty of ice, wait a couple of minutes, and the mixture should read close to 0°C (32°F). A thermometer that's noticeably off here also has a calibration problem.

What other signs point to a problem?

On digital thermometers, a display that's slow to respond, frozen, or jumping between different readings can come from a weak battery or a failing sensor; if replacing the battery doesn't fix it, the thermometer itself has failed. On dial thermometers, a needle that doesn't sit exactly at zero, or one that sticks under a dented glass face, is a common failure sign.

A mismatch between the reading and the cooking time is another clue: if meat cooked for the recommended time and temperature comes out with an internal temperature far lower or higher than expected, the thermometer becomes suspect and should be checked with the boiling-water test.

Meat cooked with a faulty thermometer can appear to hit a "safe" temperature on the display while still being undercooked inside. That's why a questionable thermometer shouldn't be trusted for critical checks — especially with poultry and ground meat — until it's verified or replaced, and visual and texture checks should back it up in the meantime.

How do you check a contactless thermometer?

The boiling-water test doesn't work directly on infrared (contactless) thermometers, since they measure surface temperature rather than liquid temperature; checking their accuracy instead relies on manufacturer-specified reference surfaces or solid objects at a known temperature, such as an ice block.

Some probe thermometers have a small adjustment nut under the dial; if the boiling-water test shows drift, turning that nut with a wrench can reset the needle to zero. Most digital thermometers don't have this kind of physical adjustment — once drift is found, the unit itself needs replacing.

Checking a frequently used thermometer's accuracy with the boiling-water test every few months adds an extra layer of safety, especially for critical uses like cooking meat; an additional check is also worth doing after the thermometer has been dropped, knocked, or left in the sun for a long time.

Accuracy can also vary between models; cheap, single-battery thermometers tend to drift more often, while calibratable models used in professional kitchens stay accurate for much longer. Running a boiling-water test on a newly bought thermometer right out of the box also catches a manufacturing defect or shipping-related drift before you ever rely on it.
